Odds and Ends
This page is for the stuff I can't classify elsewhere. Recipes Banana Nut Bread (thanks to Wendy for the recipe) Ingredients: 3/4 cup sugar, 1/2 cup margarine or butter (softened), 2 eggs, 1 cup (2 medium) mashed ripe bananas, 1/3 cup milk, 1 teaspoon vanilla, 2 cups chopped nuts (walnuts are best), 1 teaspoon baking soda, 1/2 teaspoon salt. Heat oven to 350 F. Grease only the bottom of a 9"x5" or 8"x4" loaf pan. In a large bowl, beat sugar and margarine until light and fluffy. Beat in eggs. Add bananas, milk, and vanilla. Blend well. In a small bowl, combine flour, nuts, baking soda and salt. Mix well. Add this to the banana mixture and stir until dry ingredients are moistened. Pour this into greased pan. Bake at 350 F for 50-60 minutes or until toothpick inserted in center comes out clean. Allow the bread to cool for 5 minutes. Remove from pan to allow complete cooling. Wrap tightly and store in refrigerator. Makes one (16 slice) loaf or about 3 small loaves. Enjoy, it's delicious!
Quick Fish Recipe Ingredients: 2 fish fillets (choose your favorite kind), 1/4 cup oyster sauce, 2 teaspoon garlic powder, salt (to taste), 1/4 cup chopped green onions. Clean fish and rinse. Spread oyster sauce on fish evenly on both sides. Sprinkle with garlic powder and salt. Add chopped green onions. Microwave 2-3 minutes, flip and microwave for another 2-3 minutes. Fish is done when utensil prodding causes flakes.
"Dirty Little Girl's" Pasta (thanks to Katrina for the recipe) Ingredients: Bow-tie pasta, chopped fresh garlic, 1 tablespoon capers, 1/2 cup chopped olives (black and green), 1/2 can of artichoke hearts, 1/2 can of chopped tomatoes. First, cook the pasta according to package directions (should be about 10-15 minutes). While this is cooking, sauté chopped garlic, capers, olives, artichoke hearts, and chopped tomatoes in olive oil. Add a pinch of salt and pepper to the sauce. When the pasta is finished, mix the two. That's it! Pain in the... hand! I was enjoying a ride at the Morris Bridge trails in Tampa on March 28, 2000, when I felt a spider land on my right leg. I was going about 15 mph and I took my right hand off the handlebar to swat the arachnid away. Just then I hit a small root, which turned me to the left slightly. This was enough to send me careening into the trees. I tried to stop quickly without flipping over the handlebars. Unfortunately I didn't stop fast enough and I hit a tree! My left hand was in pain, but I managed to bike to a friend's house. As soon as I walked in the door I said, "Fix me!" Ten minutes later we were in the emergency room. I had a spiral fracture in my second metacarpal (ICD code 815.00). Even worse, the bones were twisted in the unstable fracture and were in danger of fusing improperly with a cast. To make a long story short, I had surgery and I now have a dorsal plate with six screws holding my left hand together. My hand is perfect (I have full range of motion) and the insurance bill was very expensive. Moral of this story? Watch out for evil trees!
